If you have the cash then you can go for the UP300 that doesn't need as much tinkering but if you want to learn the basics and still be able to print 310 x 320 x 400 you can start with 5 times cheaper Creality CR10S Pro (x)
I suggest doing mostly PLA with it or upgrade with DirectDrive for a little easier TPU, PET-g etc (I'm not very fond of Bowden drive systems which most of these cheaper printers come with)
It requires learning doing e-steps calculation, CURA settings, other printer settings, diving into 3D modelling sooner or later.
This level can be done already from MS 3D Builder level up to SolidWorks because at some point it's just not enough downloading someone else's models.
I'm just guessing here, you might already have a lot of these skills and you'll pick up printing in a couple of months.
I'm doing mostly resin printing at the moment stuff that FDM can never really achieve at that level. But for affordable printers you'll be stuck around 192x120x245mm
