The best thing to model for perspective employers, is something they actually produce it shows that you have knowledge of their company, and they can see your skills being shown on something they can relate to, at least that's always been my experience.

You can improve something at work and share this knowledge with your colleagues. If you have a good boss and teammates, they will appreciate it.

Really depends on the field that you are applying.

Say, you're in plastic molding: creating a complex injection mold, with an animation of the process, and mold flow properties would show great skill in that field.

If you were in aviation: designing various features of a flying system, whether the engine, wing structure, electrical, etc. Having a grasp of what is required for whichever direction you want to go, it shows that you are well-versed in the field.

The list can go on, but it really comes down to narrowing down your audience and showing your skills on how you provide benefit to the team.

I remember my work after college being primarily civil-based, but I wanted to get into the mechanical. So I had to run through tutorials and practice moving designs to show that I can create a body of parts that interact with each other.
