Does anyone know what this means?

When I open my SOLIDWORKS Assemblies, some of them show a transparent green part that says it has been excluded from my BOM.

You should be more precise. You see them green in the parts list or they are also a different color in the future manager. Are they parts of the top-level assembly or subassemblies?
Try a simple assembly of 4 or 5 parts, just cubes.
Fill in the part number and description in the properties of the file.
Then make the drawing with the parts list referring to the default list. If this happens to you with Excel BOM templates you have problems with the BOM template. Otherwise you have to send me the files to make me understand, including the models of the different parts, welds, lamire, etc.
a tip use a 64-bit version of office if you have a version after 2016.

Try right-clicking on the transparent components excluded from the bill, from the complete menu choose component properties, check that the exclude component box is not checked.
