I'm having trouble simplifying a mesh STL. file so I can use it in Solidworks. Can someone take a crack at it?

Looking to simplify some STL. Mesh files from a FARO 3D scanner. Please help

If you can share/provide the mesh, I can certainly do that. Do you know the size of the current mesh? Are we talking about 10k, 100k, 1M, 10M facets?
If you want to 'track a crack at it' yourself, I would be more than happy to walk you through the use of our InStep Studio 3D application (https://InstepStudio3D.com) which is specifically aimed at doing that. I know, I know... there are applications like Geomagic and Fusion and (to a lesser extent unless you have more time than wits) FreeCad.
The remaining question would be whether it is a more 'organic' or 'geometric' shape as that determines the approach to take for a conversion (to STEP).
But anyway, please post the file or DM me and I can either provide you with a converted file (which may or may not be what you are looking for) or I can guide you through doing it yourself.
