Why should I use draft and why shouldn't sketch followed by boss or cut

If you're talking about the 30° x 14mm chamfer, you should use chamfer.
This is not a case for draft but if you want to use draft you can 'split line' the face 14mm down and then use a 30° parting line draft.
I probably don't understand your question though, maybe some more details about your concerns would make them more clear.
