Hi, I just uploaded a design (concept) for a printable lever which can be attached to a tap, so that it can be operated using your elbow.

A friend of mine who is an infection control doctor thinks it's a good idea... because touching taps to turn on/off is known to be a way to transfer infection.

It probably needs some development, starting with someone printing it and seeing if it will work! (I don't have a printer).
