What happened to the Intuitive easy to learn & navigate software principle ?????

I work across multiple fields of engineering so I have to use a large number of software packages that are forever evolving and updating.

Many past software packages incorporated the Intuitive easy to learn & navigate software principle where it was a reasonably intuitive step by step process to figure out what you had to for the next step to achieve your goal. This means new users can create awesome stuff at an early stage giving them motivation to move forward.

In recent years especially with professional software packages it is like trying to navigate your way to Russia with no road signs. You have to stop and ask advice or directions at every junction and every turn watching tutorials asking advice. Completely useless user manuals written in chinglish.

Forgive me for the rant but each year it seems to be getting worse. I understand many of these software's are used in specialized fields where people dedicate their life to only that software but over complicating a system does not make it better, it just makes it less functional especially for new users.
