How to apply coating to a sphere?
...to resemble the Earth for example?

The best way I can think of it to sketch you partner on the work plane ( you will need a number of work planes @ different angles to the sphere for it to work correct ) and then extrude it to the surface of the sphere or you could try emboss it to the surface of the sphere I know emboss will not work with Inventor on a sphere but it might in SW if you have that option?
