How to start piping in Pro/ENGINEER R5.0 and how fittings are add in assembly ?

You can click
Insert>Advanced>Pipe
Next choose among
- Geometry
- Hollow
- Constant Pad
and click Done to finish building pipe.
In assembly mode you can use align, mate and insert constraints to assemble different parts as you need.
